Lemon doesn't grow in Appenzell, so there is no lemon juice here. The plants are picked nearby — some of them this morning. They are distilled, fermented, infused, and poured by hand. Half the menu carries no alcohol. The rest holds less than you'd expect. We don't bring the world to Botanicum. We make it from what is already here.
